This is a great “make-ahead” meal for the week! When you don’t feel like cooking during one of the busier days or need some premade snacks or lunches for the kids,  make this at the beginning of the week. Chicken salad is so versatile for meals. You can use it as a dip with low carb crackers or veggies or make a filling salad or sandwich for lunch. The opportunities are endless, and this recipe is so quick and easy. Easy, peasy, and tzatziki. Oh, and keto, but that didn’t rhyme.

  • Combine the lemon juice, yogurt, milk, oil, dill, garlic, salt, and pepper. Gently fold in chicken, cheese, and cucumbers.  Serve on a bed of lettuce, tomatoes green peppers avocados for a salad, on a low carb wrap, or with low carb crackers as a dip!
