Ingredients
  

Ketonia Sandwich Rolls

Pork Marinade

  • 5 pounds boneless pork shoulder
  • 1 cup goya mojo marinade
  • 4 bay leaves

Sandwich Components

  • 4 thin slices glazed ham about 4 ounces
  • 3-4 thin slices Genoa salami with peppercorns about 1 ounce
  • 2 thin slices Swiss cheese about 1 ounce
  • 1 tbsp yellow mustard
  • Pickles to taste
  • Softened butter for grilling

Instructions
 

Pork Marinade

  • Combine pork shoulder, Goya mojo marinade, and bay leaves in a gallon-sized zip-lock bag. Marinate overnight.

Ketonia Bread

  • Combine all ingredients and knead bread according to directions on the package. Let the dough rest , covered, for 30 to 40 minutes.
  • Preheat oven to 375*
  • Divide into 6 equal portions and roll into oval shaped rolls. Let rise for 30 to 40 minutes.
  • Brush with egg wash and bake for 15 to 18 minutes. Let cool before making sandwiches.

Sandwich

  • Cut the bread in half, longwise. Layer the ham, roast pork, salami, and cheese. Top with pickles and mustard. Butter the heated skillet and cook until golden brown and melty.
  • Enjoy!!!
