Keto Tampa Cuban Sandwich

Ketonia Sandwich Rolls
- 1 bag Ketonia Baking Mix
- 1 cup warm water
- 1 tbs instant yeast
- 1 tsp honey
- 2 eggs
- 2 tbs butter softened
Pork Marinade
- 5 pounds boneless pork shoulder
- 1 cup goya mojo marinade
- 4 bay leaves
Sandwich Components
- 4 thin slices glazed ham about 4 ounces
- 3-4 thin slices Genoa salami with peppercorns about 1 ounce
- 2 thin slices Swiss cheese about 1 ounce
- 1 tbsp yellow mustard
- Pickles to taste
- Softened butter for grilling
Instructions
Pork Marinade
- Combine pork shoulder, Goya mojo marinade, and bay leaves in a gallon-sized zip-lock bag. Marinate overnight.
Ketonia Bread
- Combine all ingredients and knead bread according to directions on the package. Let the dough rest , covered, for 30 to 40 minutes.
- Preheat oven to 375*
- Divide into 6 equal portions and roll into oval shaped rolls. Let rise for 30 to 40 minutes.
- Brush with egg wash and bake for 15 to 18 minutes. Let cool before making sandwiches.
Sandwich
- Cut the bread in half, longwise. Layer the ham, roast pork, salami, and cheese. Top with pickles and mustard. Butter the heated skillet and cook until golden brown and melty.
