I've been playing with a Ketonia sourdough starter for over a year now. I even brought one on vacation with me!! But I have not perfected it yet! This is a bit of a 'cheat" to keep us all satisfied until I get a true sour perfected. You will be using the Keto Ketonia Sourdough Starter recipe which, after 5 days of feedings will give you enough starter to make this recipe.

Instructions
 

  • Combine all ingredients in bowl of Kitchen Aid. Using paddle, mix on medium for 4 minutes.
  • Turn out on work surface that has been lightly sprayed with cooking spray. Knead a bit and form into a ball.
  • Place on parchment covered sheet pan and cover with plastic wrap. Let rise till doubled, roughly 1.5 hours.
  • Again, turn out dough onto sprayed work surface and shape into a ball. You can now put it back on the parchment lined sheet to rise. I used a banneton proofing basket because I happen to have gotten on for Christmas, but it's not necessary, just pretty!!
  • Preheat oven to 400* If you have a pizza stone, not is a good time to use it! Let it preheat as well. If you don't have one, no problem, The bread will be fine on a sheet pan!
  • Let dough rise another 1.5 hours.
  • Before putting bread in oven, slash the top of the bread with a sharp knife.
  • Bake for 30 minutes. I usually throw a couple of ice cubes in the bottom of the oven for steam, but its not absolutely necessary.
  • Let bread cool on a rack before slicing. You will be rewarded for your patience! If you cut it too too, the crumb will be too moist!

Keto Sourdough Starter

I have had a helluva time trying to make a stable sour starter with my Baking mix. Even with faithful feedings I find it starts to smell awful and simply doesn't have enough oomph to raise a loaf on its own. So I got sneaky. I began with a healthy all purpose flour starter. Instead of feeding it AP flour and water, I fed it Ketonia Baking Mix and water. Since after the first feeding I discard half the starter with each feeding, it takes only about a week before the starter becomes a full keto starter! It still needs a bit of yeast to get a good rise for bread, but it's delicious as a sourdough cracker! You will need to get hold of 4 ounces of fresh, bubbly sourdough starter. After 2 years of quarantine, it shouldn't be too hard. If all else fails, King Arthur Flour sells a starter mix! Here is the feeding schedule. Cracker recipe will follow!

  • In a scrupulously clean glass jar, weigh out 4 oz. starter, 4 oz water and 2 oz. Ketonia mix. Mix thoroughly. Cover. leave on counter overnight.
  • At roughly the same time of day, discard 5 oz (roughly half) of the starter. Add 1 oz mix and 2 oz water. Mix thoroughly and cover. Let sit on counter overnight.
  • Again, at roughly the same time of day discard half the starter. This will be about 4 oz now. Feed starter with 1 oz mix and 2 oz water You should be getting some bubbles in the starter. let sit on counter overnight.
  • Repeat, discarding half (4 oz. or so) and feeding 1 oz mix and 2 oz water.

  • Repeat, discarding half (4 oz. or so) and feeding 1 oz mix and 2 oz water. you should have an active starter by now. It should smell sweet, not boozy or, god forbid, unpleasant. If it does, unfortunately, you'll have to start over.
  • You can use the starter now. You should have about 8 oz.
