Keto Gyros with Keto Greek Sides

Gyros
- 2 medium onions chopped
- 4 lbs ground lamb
- 8 cloves garlic minced
- 2 tbsp marjoram
- 2 tbsp rosemary
- 1 tbsp World Spice Merchants Shawarma spice mix Or other Mediterranian spice mix
- 4 tsp kosher salt
- 1 tsp black pepper
Tzatziki Sauce
- 1 Large Cucumber grated
- 1 cup plain full fat Greek Yogurt
- 5 garlic grated
- 1 tbs olive oil
- 1 tsp red wine vinegar
- 1 tsp dried dill
Zucchini Pancakes
- 3 medium zucchini shredded
- 3 large eggs
- ¼ cup almond flour
- ½ small onion grated
- 1 tbsp dry dill
- 1 cup crumbled feta
- 1 tbsp Olive Oil for frying
Mediterranian Cauliflower rice
- 1 bag frozen riced cauliflower microwaved according to directions
- ½ small onion minced
- 3 cloves garlic minced
- 1/2 lemon squeezed
- 1 tsp Better than Bouillon
- 1 tbsp chopped chives
- 2 tbsp pine nuts toasted
- 1 tsp olive oil
Instructions
Gyros
- Process onion in food processor until well chopped. Turn it out on a towel and squeeze the juice from the onion.
- Return onion to processor along with other ingredients process till it is a fine paste. Scrape down as needed.
- Press meat into a large loaf pan.
- Bake in preheated oven at 325* for 90 minutes or till 165* internal temp.
- Carefully drain fat from pan.
- Wrap a brick in aluminum foil. Set brick on meat and let sit for 15 minutes or so. Slice thin!
Tzatziki Sauce
- Using a box grater, grate cucumber onto same towel, twist up towel and squeeze out as much moisture as possible. Mix together all ingredients except frying oil.
Zucchini Pancakes
- Using the same towel place onion and zucchini in center and twist to squeeze the juices. Get it as dry as you can..
- Mix together in bowl with all other ingredients.
- Set a large skillet on medium high.
- Add oil once pan is hot.
- Using a large spoon, gently add pancakes to oil, creating 8 pancakes. Cook till brow and flip. 3 to 5 minutes per side.
Mediterranian Cauliflower rice
- Heat medium fry pan to med, add pine nuts and toast till fragrant. 3 or 4 minutes. Set aside.
- Using the sam pan set over medium high heat. Add oil .
- Add onions and garlic and cook to soften 3 or 4 minutes
- Add cauliflower and saute for a minute or so.
- Squeeze juice of lemon onto Cauliflower and stir in Better than Bouillon. Stir till combined and top with pine nuts.
- Top each pancake with gyro meat and side with riced cauliflower.
