Keto Loaded Breakfast Strata Casserole

Ketonia Bread
- 1 Ketonia Baking Mix - Click for Free Recipe
- 2 eggs
- 2 tbs butter room temperature
- 1 tsp honey
- 1 tbs instant yeast
- 1 egg mixed with 1 tbs water egg wash
Breakfast Strata
- 1 lb Chorizo browned and drained
- 1 lb bacon cooked and crumbled
- 1 lb mushrooms sliced and sauteed
- 4 large eggs
- 1 1/2 cups heavy cream
- 1/2 tsp kosher salt
- 1 tsp ground dry mustard
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Gruyere cheese
- chopped fresh chives for garnish
- dollop sour cream for garnish
Instructions
- Combine all bread ingredients and knead bread according to directions on the package. Let the dough rest , covered, for 30 to 40 minutes.
- Preheat oven to 375*
- Flatten dough into a rectangle and roll, jelly roll style into a loaf. Let rise for 30 to 40 minutes.
- Brush with egg wash and bake for 30 minutes.
- In a large skillet, brown and crumble chorizo until cooked. Drain and set aside. Combine shredded cheddar and Gruyere cheeses, then set aside.
- To a large mixing bowl, add eggs, cream, salt, dry mustard, black pepper and paprika. Whisk until combined.
- Add cubed bread pieces to the bottom of a 3 quart casserole dish. Top with crumbled sausage, bacon, and 3/4 of the cheeses. Pour egg custard over the top, using a wooden spoon to gently push any un-soaked bread down into the custard. Sprinkle with remaining shredded cheeses.
- Preheat oven to 350*
- Bake, uncovered, for 40-45 minutes till golden brown and delicious. Let cool for 15 minutes. Cut into 12 pieces and top with chives and sour cream.
