You can never go wrong with a french toast. But if you are making breakfast for the whole fam, overnight french toast is a good idea. And we made it better - we had it keto-fied! This Keto Overnight Berry French Toast is so good you won’t even know it’s keto.

  • KitchenAid Professional 600 Stand Mixer 6 quart


Ketonia Bread

  • 1 Ketonia Bread Mix
  • 2 eggs
  • 2 tbsp butter room temperature
  • 1 tsp honey
  • 1 tbsp instant yeast
  • 1 egg mixed with 1 tbsp water egg wash

French Toast

  • 2 tbsp butter
  • 3 tbs swerve Brown
  • 4 eggs large
  • ½ cup whole milk ricotta
  • 3 tbsp Swerve
  • 1 cup Heavy Cream
  • 1 tsp orange extract
  • 4 cups Ketonia bread cut into 1-inch cubes
  • 4 oz raspberries
  • 4 oz blackberries


  • Prepare the ingredients.
    Keto Overnight Berry French Toast
  • Combine all ingredients: Ketonia Bread Mix, eggs, butter, honey, instant yeast, and knead bread according to directions on the package. Let the dough rest, covered, for 30 to 40 minutes.
  • Preheat oven to 375*
  • Flatten dough into a rectangle and roll, jelly-roll style into a loaf. Let rise for 30 to 40 minutes.
  • Brush with egg wash and bake for 30 minutes.
