Ketonia Bread
- 1 bag Ketonia Baking Mix - Click for Free Recipe
- 2 eggs
- 2 tbsp butter room temperature
- 1 tsp honey
- 1 tbsp instant yeast
- 1 egg mixed with 1 tbsp water egg wash
French Toast
- 2 tbsp butter
- 3 tbs swerve Brown
- 4 eggs large
- ½ cup whole milk ricotta
- 3 tbsp Swerve
- 1 cup Heavy Cream
- 1 tsp orange extract
- 4 cups Ketonia Baking Mix - Click for Free Recipe cut into 1-inch cubes
- 4 oz raspberries
- 4 oz blackberries

Instructions
- Prepare the ingredients.
- Combine all ingredients: Ketonia Bread Mix, eggs, butter, honey, instant yeast, and knead bread according to directions on the package. Let the dough rest, covered, for 30 to 40 minutes.
- Preheat oven to 375*
- Flatten dough into a rectangle and roll, jelly-roll style into a loaf. Let rise for 30 to 40 minutes.
- Brush with egg wash and bake for 30 minutes.
For the overnight french toast
- Combine butter and brown Swerve in a microwave cup.
- Nuke 30-40 seconds, until melted.
- Whisk until combined.
- Add cream, orange extract, butter, and brown swerve mixture.
- Gently fold in berries and bread cubes.
- Pour into a large casserole dish, cover with plastic and let rest in the fridge overnight.
- Preheat oven to 350* and bake until golden brown and baked through, 45 to 50 minutes.
- Let stand for 5 minutes. Divide into 8 portions and serve with sprinkled powdered sugar.
