For the Ketonia Bread
- 1 bag Ketonia Baking Mix - Click for Free Recipe
- 2 eggs
- 2 tbsp butter room temperature
- 1 tsp honey
- 1 tbsp instant yeast
- 1 egg mixed with 1 tbsp water egg wash
For Quick Pickled Veggies
- ¼ cup Swerve
- ½ cup white vinegar
- Pinch salt
- 1 cup Daikon cut into matchstick size pieces
- 1 /2 cup carrot cut into matchstick size pieces
- ½ cup cucumber sliced into matchstick size pieces
For the Pork Roast
- 1 lb pork tenderloin
- ½ tsp Chinese five spice powder
- 1 tsp kosher salt
- 1 tsp black pepper
- ½ tsp garlic powder
Other ingredients
- 4 oz Country Pate
- ½ cup Mayonnaise
- 3 tbs Sriracha
- ½ cucumber Sliced
- 1 bunch Cilantro
- 1 bunch Fresh mint
- ¼ cup Pickled Jalapeno slices
Instructions
For the Ketonia Bread
- Combine all ingredients: Ketonia Bread Mix, eggs, butter, honey, instant yeast, and knead bread according to directions on the package. Let the dough rest, covered, for 30 to 40 minutes.
- Preheat oven to 375*
- Divide into 6 equal portions and roll onto sub rolls. Let rise for 30 to 40 minutes.
- Brush with egg wash and bake for 15 to 18 minutes. Let cool before making sandwiches.
For the Quick Pickled Veggies
For the Pork Roast
- Preheat oven to 500* Combine pork spices: Chinese five spice powder, kosher salt, black pepper, garlic powder, in a small bowl and rub all over the surface of pork loin. Roast for 15 minutes to brown. After 15 minutes turn down the temperature to 375* and cook for another 15 minutes or till the thermometer reads 145*.
To Assemble
- Slice Roll in half.
- Slather with mayo.
- Drizzle with Sriracha.
- Crumble or smear pate.
- Layer thinly sliced pork loin.
- Top with pickled daikon, mint leaves, cilantro, and jalapenos.
- Slather the top half of bread with mayo and sriracha.
