Veggies. Love them or hate them, they are integral to your health and add so many nutrients and benefits. Adding veggies to your diet is imperative, but if you or a family member are picky eaters, this roasted veggie dish will make any tastebud sing. Use as a side or eat for lunch, this keto and low carb lunch, dinner, or side dish is delicious and satisfying.

  • Preheat oven to 400*
  • Toss all ingredients in a large bowl, reserving ¼ cup parmesan for sprinkling on top. Fold gently making sure oil, cheese, and salt and pepper are evenly distributed.
  • Layer in a roasting dish. Sprinkle top with remaining cheese.
  • Bake 30 to 40 minutes till brown and bubbly!
  • Easy, peasy, and cheesy!
