Keto Mediterranean Shakshuka

What’s better than casserole for family-friendly meals and leftovers? Shakshuka. Keto shakshuka that is. For those who are unfamiliar shakshuka is a Mediterranean and North African dish composed of eggs poached in a sauce of tomatoes, olive oil, peppers, onion, and garlic, and is commonly spiced with cumin, paprika, cayenne pepper, and nutmeg. Shakshuka is great because of the fact that it’s so easy to make and done in one dish. This recipe is keto, low carb and so delicious! Follow our recipe below for a nutritious and delicious breakfast, lunch or dinner meal the whole family can enjoy.

  • In a large cast-iron pan, dry roast cumin for a couple of minutes. Add oil, onion, peppers, garlic, thyme, parsley, cayenne and smoked paprika. Cook over medium-high heat until lightly browned.
  • Add tomatoes, saffron, harissa and salt and pepper. Add water till the mixture has a nice tomato sauce consistency. Cook on low for 15 minutes adding water if necessary.
  • Using a large spoon, make six wells in the sauce. Break one egg per well. Season with salt and pepper and cover for 10 minutes or so until eggs are set but still runny. Finally, sprinkle with feta and then serve!
