Summer in a glass! Fresh lime is the way to go when making Mojitos! Unless you're making a pitcher full! (Which I have done! Good Party!) Muddle your mint gently to release the flavor. And a confession: I don't use overproof rum as a general rule! It's what I had available for the photo shoot though! I use regular proof white rum. It's delish and you won't go face down after 1! - 2 oz rum
- 5 mint leaves
- 1 oz lime juice
- 1 oz Keto Simple syrup
- Splash Club Soda

- In a cocktail Shaker, gently muddle the mint till aromatic.
- Add the rum, lime juice, simple syrup and some ice and shake.
- Strain into a glass filled with fresh ice. Top with a splash of club soda and garnish with more mint and sliced lime. Enjoy!
