My husband got a hydroponic lettuce grower for his birthday so we have a lot of soft lettuce. And I do mean A LOT! The other night I couldn't look at another salad, so I came up with this! It is sweet and spicy and just right. Make sure to use toasted sesame oil. It really makes the recipe!

Instructions
 

  • In a medium bowl, combine peanut butter, rice vinegar, Tamara, allulose, ginger, garlic and red pepper and whisk till smooth. Thin with a bit of water if too think. set aside.
  • Heat large skillet over med high heat. Add oil. Saute chicken till lightly browned.
  • Add onion, garlic and water chestnuts and cook till translucent.
  • Stir in sesame oil, fish sauce, tamari, 1 tbs Allulose and ginger. Add a few tablespoons of water if it seems too dry.
  • To serve, spoon chicken mixture into lettuce wraps and fold burrito style. Drizzle with peanut sauce and sliced almonds and enjoy.
