Method
- In a medium bowl, combine peanut butter, rice vinegar, Tamara, allulose, ginger, garlic and red pepper and whisk till smooth. Thin with a bit of water if too think. set aside.
- Heat large skillet over med high heat. Add oil. Saute chicken till lightly browned.
- Add onion, garlic and water chestnuts and cook till translucent.
- Stir in sesame oil, fish sauce, tamari, 1 tbs Allulose and ginger. Add a few tablespoons of water if it seems too dry.
- To serve, spoon chicken mixture into lettuce wraps and fold burrito style. Drizzle with peanut sauce and sliced almonds and enjoy.
