Keto Chicken Lettuce Wraps with Peanut Sauce

My husband got a hydroponic lettuce grower for his birthday so we have a lot of soft lettuce. And I do mean A LOT! The other night I couldn't look at another salad, so I came up with this! It is sweet and spicy and just right. Make sure to use toasted sesame oil. It really makes the recipe!

  1. In a medium bowl, combine peanut butter, rice vinegar, Tamara, allulose, ginger, garlic and red pepper and whisk till smooth. Thin with a bit of water if too think. set aside.
  2. Heat large skillet over med high heat. Add oil. Saute chicken till lightly browned.
  3. Add onion, garlic and water chestnuts and cook till translucent.
  4. Stir in sesame oil, fish sauce, tamari, 1 tbs Allulose and ginger. Add a few tablespoons of water if it seems too dry.
  5. To serve, spoon chicken mixture into lettuce wraps and fold burrito style. Drizzle with peanut sauce and sliced almonds and enjoy.
