I don't need to re-invent the wheel. All Day I Dream About Food (and the brains behind it,) Carolyn Ketchum, has done it for me! This is her caramel sauce and it is amazing. Ingredients
- 1 cup butter
- 3 tbs Swerve Brown
- 3 tbs Bochasweet
- ½ cup heavy cream
- ¼ tsp xanthan gum
- ¼ tsp sea salt
- 1 tsp vanilla

- In a medium, heavy saucepan, combine butter, brown swerve and bochasweet. Bring to a boil over medium heat and cook 4-5 minutes, stirring constantly and making sure not to burn.
- Remove from heat and add vanilla. Pour in cream. It will bubble furiously. Sprinkle xanthan gum on top and whisk to combine.
- Return to heat and boil for a minute to so. Add salt. keep warm and Set aside.
