Oven baked chicken doesn’t always have to be boring and dry! With the right recipe, you can make delicious, crispy, and juicy chicken breast for meal prep. We have given you just that with our Crispy Cheesy Keto Oven Baked Chicken. 
This chicken is SO good. But, I will admit, I didn’t make it as often as I wanted it. Why? Because of traditional pork rind panko. It’s a pain, right? You buy two big bags of pork rinds, put them bit by bit in your food processor, and when you pour them out ...they have transposed themselves into exactly enough panko to cover an M&M. 
But, fear not! I have found the answer! Bacon’s Heir Pork Panko By The Pound. It is fresh and ready to take you to the land of crispy panko goodness. Their website is baconsheir.com. I LOVE them! Instructions
 

  • Preheat oven to 425*
  • Combine Panko, cheese, and 2 tsp adobo in a large bowl. Set aside.
  • Seed the chile’s and mince them up well in a small food processor or blender. Add lime juice, mayo, adobo, and process till smooth. Reserve some for dipping!
  • With a pastry brush, Slather the mayo mixture on each piece of chicken then dredge it in panko.
  • Place on a baking sheet lined with foil.
  • Depending on the thickness of your chicken, bake from 30 to 45 minutes.  Chicken should be crispy and an internal temp of 165*
    Keto Oven Baked Chicken
  • Dip in reserved mayo mixture if desired!
