Keto Creamy Kabocha and Cauliflower Gratin
Geri TerryIngredients
- 4 cups cubed peeled kabocha squash about 1.5 pounds
- 1 head of cauliflower broken into even sized florets
- 3 ½ cups Heavy Cream
- 1 tbsp Better Than Bouillon Chicken flavored
- 1 cup 4 ounces shredded Gruyère cheese
- ¼ teaspoon freshly ground black pepper
- ¼ teaspoon ground nutmeg
- !/2 cup pork Panko or blast pork rinds in a food processor
- 2 tbsp butter
- ¼ cup parmesan cheese
- ¼ tsp garlic powder
Instructions
- Preheat oven to 375°.
- Combine squash and cauliflower in a 9 x 13 casserole dish.
- Combine cream and bouillon in a medium saucepan. Bring to a boil. Boil gently for a minute or so to thicken. Remove from heat. Add cheese, pepper, and nutmeg, stirring until cheese melts. Pour Cheese sauce over vegetables in casserole dish.
- Combine Pork Panko, parmesan butter and garlic in a small bowl. Microwave to melt butter. (30 seconds to a minute) Sprinkle evenly over the top of the casserole.
- Bake for 45 minutes or until the casserole is bubbly and golden and the veggies are soft.
