Keto Bread Cheese Kababs

Bread cheese isn't bread at all! It's a mild squeaky cheese, traditionally made in Finland! It doesn't melt all the way when heated so it keeps its' shape. You can grill it up and eat it as is, but WHY WOULD YOU DO THAT WHEN THIS IS SO EASY??? All you have to remember to do is save some flatbreads when you make them and plop these kabobs on top! Really good!

Method
 

  1. If using fresh rosemary stems, remove all leaves but the top inch. Mince 1 tbs rosemary leaves. Reserve the rest for another use.
  2. Cut cheese into 12 equal cubes.
  3. Combine cheese, tomatoes, halved mushrooms, rosemary, chives, garlic and olive oil. Stir to coat.
  4. Push cheese and veggies, alternating between veggies and cheese, onto skewers.
  5. Preheat grill pan to medium.
  6. Place skewers on grill pam, turning occasionally. Cook 5-8 minutes , till browned and warm.
  7. Reheat flatbreads on grill pan.
  8. Place kabab on warmed flatbread. Fold bread up around skewer and pull rosemary stem out. Drizzle any leftover olive oil over filling!
