Keto Cauliflower Mashed “Potatoes”

I've tried all kinds of recipes for the famous cauliflower mashed potatoes and I'm ALWAYS disappointed! They are too wet, too "dicey", never the right texture or consistency. Not to mention a pain in the neck to make. These are a revelation! Creamy and cheesy, they are the perfect vehicle for spicy short ribs, pot roast or meatloaf! (I love 'em plain with lots of pepper, too!)

Method
 

  1. Melt butter in a fry pan over medium heat.
  2. Stir in frozen cauliflower. add salt and pepper to taste. Saute for 5 minutes don’t let the cauliflower get brown.
  3. Add 1 cup water to pan, cover and cook for 8 to 10 minutes checking occasionally to make sure there is not drying out.
  4. Transfer to a bowl. Add sour cream and parmesan cheese.
  5. Using an immersion blender, mash the cauliflower till smooth and combined.
  6. Add more salt and pepper and a bit more butter, if desired!
