Method
- If using fresh rosemary stems, remove all leaves but the top inch. Mince 1 tbs rosemary leaves. Reserve the rest for another use.
- Cut cheese into 12 equal cubes.
- Combine cheese, tomatoes, halved mushrooms, rosemary, chives, garlic and olive oil. Stir to coat.
- Push cheese and veggies, alternating between veggies and cheese, onto skewers.
- Preheat grill pan to medium.
- Place skewers on grill pam, turning occasionally. Cook 5-8 minutes , till browned and warm.
- Reheat flatbreads on grill pan.
- Place kabab on warmed flatbread. Fold bread up around skewer and pull rosemary stem out. Drizzle any leftover olive oil over filling!
