Keto Beef and Cheese Taquitos
You won't miss the tortillas at all with these crunchy taquitos! We melt 2 kinds of cheese till crispy then roll delicious taco meat up inside and dip them in spicy chipotle mayo! Yum! Plus, how fun is it to say "Keto Taquito!" PS: Please, Please, PLEASE shred cheeses like cheddar, mossarella and Colby Jack yourself. For one thing , they simply taste better. In addition, there are no additives. Did you know pre-shredded cheeses have cornstarch and other things to keep them from clumping? Well they do! These additives keep the cheese from sticking together, but it also adds carbs. No Bueno! Shred Your own cheese my friends!

- Combine Parmesan and jalapeño jack cheeses in a bowl.
- Place ground beef in a frying pan. Cook until nicely browned.
- Stir spices and piquant sauce into beef and cooke another minute or 2. Set Aside.
- Mince chipotle and stir into mayonnaise.
- Preheat nonstick frying pan on medium.
- Sprinkle about ½ cup of cheese mixture onto pan. Cook until cheese is melted and edges are browning.
- Spoon beef mixture on top of cheese.
- Roll up using a spatula. Remove from Pan.
- Serve with chipotle mayo.
