Method
- Combine Parmesan and jalapeño jack cheeses in a bowl.
- Place ground beef in a frying pan. Cook until nicely browned.
- Stir spices and piquant sauce into beef and cooke another minute or 2. Set Aside.
- Mince chipotle and stir into mayonnaise.
- Preheat nonstick frying pan on medium.
- Sprinkle about ½ cup of cheese mixture onto pan. Cook until cheese is melted and edges are browning.
- Spoon beef mixture on top of cheese.
- Roll up using a spatula. Remove from Pan.
- Serve with chipotle mayo.
