Keto Vegan Cauliflower Fried Rice
Keto Vegan Chinese Fried Cauliflower Rice
- 1 cup portabella mushrooms diced
- 1 bunch asparagus cut into 1 inch pieces
- 3 garlic cloves minced
- 2 tbsp ginger minced or grated
- 1 tbsp Spicy Chili Crisp Like Lao Gan Ma
- 1 Bunch scallions thinly sliced
- 1 tbs olive oil
- 2 frozen cauliflower rice bags
- 1 tbs soy sauce or to taste
- 1 tbs sesame oil or to taste
- Sauté garlic, ginger, scallions, diced mushrooms, asparagus and chili crisp in olive oil on medium high heat till nicely browned. Mound mixture on the side of the pan to make room for the cauliflower. Spread cauliflower rice evenly in the pan and let brown, stirring occasionally so cauliflower browns evenly. Now mix veggie and cauliflower, spread evenly again and let bottom get crusty, stirring 2 or 3 times. Splash soy and sesame oil stirring 2 or 3 more minutes. Taste and finish with more soy and sesame if desired.
