Keto Chicken & Dumplings

Geri Terry
I'm the oldest of five kids. That's 7 for dinner every night. And we sat down at the table together EVERY night! And my Mom worked. And we ate by 6! I'm pretty sure most of of us would have gone on strike! Or to the Poor House! LOL. My Mom had roughly a 2 week rotation of family dinners. Chicken and dumplings was in the winter rotation. I am pretty sure I was the only kid in the family who loved dumplings. My brothers and sisters, not so much. Every other week I got my beloved dumplings! Lots of Pepper, lots of gravy. Here's my Keto rendition of my childhood favorite!

Ingredients

Chicken stew

  • 1 tbsp oil
  • 2 ½ lbs chicken parts of your choice bone-in
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 1 whole carrot
  • 2 stalks celery diced
  • 4 cups water
  • 1 tsp poultry seasoning
  • 1 tbsp Better than Bouillon chicken
  • 1 ½ cups mixed vegetables frozen
  • ½ cup heavy cream

Dumplings

Instructions

  • Preheat oven to 325*
  • In a dutch oven (heavy-bottomed large pot) on medium-high heat, pour oil in pot and brown chicken on all sides. Remove chicken and set aside. Combine onion, garlic, whole carrot, and celery in the pot and saute until onions are soft and translucent. Pour water over sauteed vegetables and add browned chicken back into the dutch oven. Stir in poultry seasoning and Better than Bouillon. Put the top on and cook in the oven until the chicken is tender and falling off the bone, about 2 hours.
  • Take the pot out of the oven and remove the chicken and carrot. Once the chicken is cool enough to handle, remove the bones and dice up the chicken meat. Transfer chicken back into dutch oven and add frozen mixed vegetables and heavy cream. Cook on medium-low heat and bring to a simmer for about 10 minutes while you make dumpling dough.
  • In a medium bowl, whisk together Ketonia mix, baking powder, salt, and dried parsley. Add heavy cream and mix well. With a large spoon, roughly scoop 6 balls of dough and carefully place them in the simmering chicken stew. Place the lid back on the dutch oven and steam dumplings for 15 minutes. Divide into 6 bowls and serve hot!
