Keto Authentic Cajun Gumbo

For Broth
- 4 tbsp. butter
- 4 tbsp. Ketonia Baking Mix (Click for Free Recipe)
- 5 ½ cup chicken broth
For the Gumbo
- 12 ounce package andouille sausages sliced into ‘coins’
- 1 lb. chicken breast cubed
- ½ bunch celery diced, leaves and all
- 1 green bell pepper diced
- 1 large yellow onion diced
- 1 bunch green onion finely chopped
- 3 cloves garlic
- ½ cup chicken broth
- 1-2 tbsp. Cajun seasoning
- 1 lb. shrimp pre-cooked
- 10 oz riced cauliflower for serving optional
- 1 tbsp. butter for cauliflower
Instructions
For the Light Roux
- In a large pot combine Ketonia mix and butter. Cook on medium-low heat, stirring constantly for 3 minutes. Add in 5 ½ cups of chicken broth.
For the Gumbo
- In a separate skillet on medium-high heat place the sausage slices and chicken in one layer in the pan. Brown them well on each side, about 2-3 minutes per side. Transfer cooked sausage and chicken to a plate. Mix celery, bell pepper, onion, green onion,and garlic into the same skillet, saute for about 5 minutes. Transfer veggies straight into your large pot. Add 1/2 cup of the chicken broth to the hot skillet that had the meat and veggies to deglaze the pan. Pour the broth and drippings into your large soup pot. Bring to a boil over medium heat and boil for 5-7 minutes. (Skim off any foam that may rise to the top of the pot.) Stir in Cajun seasoning, to taste.
- Add chicken, sausage, and shrimp.
- At this point taste it and add more seasonings to your liking–salt, pepper, chicken bouillon paste, garlic, until you reach the perfect flavor.
- Using a thin cotton kitchen towel, squeeze any excess water out of riced cauliflower. On a frying pan over medium-high heat, saute riced cauliflower in butter for about 2-3 minutes. The cauliflower should be very lightly browned. Serve under gumbo.
