These Keto Pumpkin Muffins are a riff on Colonial Williamsburg's sweet potato muffins. They are served in Christiana Campbells Tavern and I have always loved them. (And Colonial Williamsburg)! So I knew I had to play with the recipe! Slightly sweet, crunchy with nuts and warmly spicy, these muffins deserve a resounding "Huzzah! Colonial Williamsburg, by the way, is the worlds largest living history museum. The colonial capitol of Virginia on the eve of the American Revolution, restored and brought to life, it is a wonderful vacation for young and old! 1 Muffin tin
Cupcake liners
1 Kitchen Aide Stand Mixer

Instructions
 

  • Preheat oven to 400*
  • In bowl of kitchen Aid mixer, cream Swerve and butter till light and fluffy.
  • Add egg, mix till fully incorporated.
  • Add pumpkin, mix till combined.
  • In a separate bowl, whisk together dry ingredients.
  • Add the dry ingredients alternately with the milk and chopped nuts until just blended. Do not over mix.
  • Spray cooking spray into liners.
  • Fill each tin completely or for larger muffins, only fill 9 cup. Sprinkle a little swerve and cinnamon on top, if desired.
  • Bake for 25 minutes and enjoy!
