Keto Armadillo Eggs

Meaty, spicy, cheesy and utterly satisfying! These are Jalapeño poppers on steroids! Amazing at a barbecue or for the football game. Delish!

Method
 

  1. Preheat oven to 450*Line sheet pan with parchment. Place rack over sheet pan.
  2. Slice off tops of jalapeños. Discard seeds and pithy ribs.
  3. Combine softened cream cheese, cheddar and garlic salt. Spoon into pastry bag or zip top bag. Cut hole in bag.
  4. Fill each jalapeño with cheese mixture by squeezing bag.
  5. Using about 2.5 oz of sausage, mold around jalapeños till fully covered and place on baking rack.
  6. Bake for 15 to 20 minutes till golden brown and DELICIOUS! Let cool a few minutes and go for it!!
