Keto Mozzarella Stuffed Zucchini Bundles
Geri TerryI decided to try something new and came up with these Keto Mozzarella Stuffed Zucchini Bundles. The fresh mozzarella adds a nice creamy texture to the stuffed zucchinis. The fried pork panko crumb crust adds a wonderful crunchiness to the dish. These took about 25 minutes to throw together and I simply used what was on hand, so this is a very inexpensive dish.

Ingredients
- 2 zucchinis
- 4 oz fresh mozzarella cheese
- 1/2 cup Ketonia Baking Mix
- 4 eggs
- 1 cup pork panko crumbs
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp italian seasoning
- oil for frying
- parmesan for garnish

Instructions
- Heat about 1 inch of oil in a large, high-edged skillet to about 325-350* on low heat. Wash your zucchinis and using a potato peeler, slice the zucchini long ways. You want to end up with 12 long, flat, and skinny strips of zucchini. There will be left over zucchini since we are only using the fattest part. You can save the leftover for another recipe or just fry it up with the rest. Slice your mozzarella into 6 chunks, about the same thickness as your zucchini strips.
- In 3 seperate bowls, prepare your wet and dry ingredients. In one bowl, whisk the eggs. In another bowl goes the ketonia bread mix. In the last bowl is pork panko, salt, pepper, and italian seasoning, whisked together.
- Place two strips of zucchini on top of eachother in a cross pattern. Place a cube of mozzarella in the middle of the zucchini strips. Fold the zucchini over the mozzarella, one piece at a time. Secure with a toothpick. Dip the bundle in the ketonia mix first and completely cover. Shake off the excess mix and the completely submerge in whisked eggs. Shake off any egg drips and place in the panko, completely cover. Set on a plate and repeat with the remaining 5 bundles.
- Once the oil is heated, it's time to cook the zucchini wraps. Place all 6 into the hot oil (if they will all fit). Cook for 2 minutes, then flip. Cook for another 2 minutes. Transfer onto a paper towel to dry. Sprinkle with parmesan if desired.
