Keto Braised Short Rib Sandwiches & Mashed CauliflowerÂ

Keto Braised Short Ribs Directions:
- Preheat oven to 300*F
- In a large heavy bottom dutch oven, brown beef and onions. Add the rest of the ingredients and stir. Don’t add salt just yet as the broth can be pretty salty!
- Cook low and slow for 3 or 4 hours. Meat is ready when it falls apart.
- The easiest way to shred meat is to put it in the bowl of a Kitchen Aid stand mixer (remove any bones first) using the paddle slowly mix the meat till it is shredded!
- You can also shred then beef with 2 forks!
- Return meat to liquid in pot and stir. Taste for seasoning and add salt and pepper if necessary.
- I serve this on Ketonia Bread Rolls with some guac and mashed cauliflower. Sometimes I serve it on top of the mashed Cauliflower. Both are delish! Cauliflower mash Recipe to follow.
Mashed Cauliflower Directions:
- Cook Cauliflower according to package directions.
- Using a large tea towel, pour cauliflower into the center and (once it has cooled a bit), twist the towel and squeeze out as much liquid as you can.
- Transfer a pot and mash cauliflower with butter over low heat. Combine with cheeses and stir till cheese is melted. Add salt and pepper to taste.
