Keto Braised Short Rib Sandwiches & Mashed Cauliflower

Ingredients
  

  • 4 lbs boneless Short ribs ((I threw in a couple of bone-in ones for extra flavor))
  • 1 – quart Beef broth
  • 1 medium onion (chopped)
  • 4 cloves garlic (grated or minced)
  • 1 can Rotel tomatoes
  • 2 Bay Leaves
  • 1 tbs smoked paprika
  • 28 oz riced cauliflower (fresh)
  • ½ cup parmesan cheese
  • 2 cups cheddar cheese (shredded )
  • 3 tbs butter

Method
 

Keto Braised Short Ribs Directions:
  1. Preheat oven to 300*F
  2. In a large heavy bottom dutch oven, brown beef and onions.  Add the rest of the ingredients and stir. Don’t add salt just yet as the broth can be pretty salty!
  3. Cook low and slow for 3 or 4 hours.  Meat is ready when it falls apart.
  4. The easiest way to shred meat is to put it in the bowl of a Kitchen Aid stand mixer (remove any bones first) using the paddle slowly mix the meat till it is shredded!
  5. You can also shred then beef with 2 forks!
  6. Return meat to liquid in pot and stir. Taste for seasoning and add salt and pepper if necessary.
  7. I serve this on Ketonia Bread Rolls with some guac and mashed cauliflower. Sometimes I serve it on top of the mashed Cauliflower.  Both are delish! Cauliflower mash Recipe to follow.
Mashed Cauliflower Directions:
  1. Cook Cauliflower according to package directions.
  2. Using a large tea towel, pour cauliflower into the center and  (once it has cooled a bit), twist the towel and squeeze out as much liquid as you can.
  3. Transfer a pot and mash cauliflower with butter over low heat. Combine with cheeses and stir till cheese is melted.  Add salt and pepper to taste.
