Keto Mediterranean Feta Toast
This snack is really a party in your mouth! Salty feta, fresh tomatoes, Kalamata olives! All the good stuff. And lots of textures! Crunchy, smooth, crisp! This is one of my Fave Raves!
Ingredients
Method
- In a small bowl, combine feta, greek yogurt, oregano and a tsp of the oil from the sun dried tomatoes. Stir till creamy. Set aside.
- Rough chop sun-dried tomatoes. Mince red onion. Half Kalamatas and cherry tomatoes. Rough chop capers.
- Fold veggies together in small bowl.
- Toast bread.
- Top each slice of toast with half feta spread, then split the tomato mixture between the toasts. Sprinkle with fresh herbs or olive oil if desired.
