A proper keto Reuben on thick-sliced Ketonia bread with corned beef, Swiss, sauerkraut, and thousand island. Griddled in butter until the bread is golden and the cheese is melting. New York deli quality at home.

Thousand Island Dressing

Method
 

  1. Make thousand island: combine mayo, ketchup, relish, and horseradish. Mix well.
  2. Spread thousand island generously on all 4 bread slices. Layer corned beef on 2 slices, then Swiss cheese, then well-drained sauerkraut. Top with remaining bread slices.
  3. Melt butter in a skillet over medium. Grill sandwiches until golden brown on both sides and cheese is melted, about 3 to 4 minutes per side.

Notes

Drain the sauerkraut very well or the sandwich gets soggy. Thousand island keeps in the fridge for a week and is great on burgers too. Nutrition is estimated per sandwich.
