Keto Pesto Egg Toast

We are obsessed with pesto! It’s the perfect way to add loads of flavour to dishes. If you love the taste of eggs in any form, this is one dish you’ll want to try. This recipe combines the creaminess of pesto with the deliciousness of eggs to create an incredible flavor profile.

Ingredients
  

  • 1 slice Ketonia bread
  • 2 tbsp Pesto
  • 1 whole egg
  • 2 tbsp goat cheese
  • olive oil spray (for the pan)

Method
 

  1. Heat your skillet over high heat and spray with olive oil. Place one slice of Ketonia bread on the hot skillet and toast both sides. Transfer toast to a plate. Spray your skillet with more oil. Smear pesto inside skillet and let warm slightly. Drop an egg into the center of the pesto. Cover with a lid and let cook for 1-2 minutes or until the whites of the egg are completely cooked. Smear goat cheese on one side of the toast and top with the pesto egg. Slice in half & enjoy!
