- Heat your skillet over high heat and spray with olive oil. Place one slice of Ketonia bread on the hot skillet and toast both sides. Transfer toast to a plate. Spray your skillet with more oil. Smear pesto inside skillet and let warm slightly. Drop an egg into the center of the pesto. Cover with a lid and let cook for 1-2 minutes or until the whites of the egg are completely cooked. Smear goat cheese on one side of the toast and top with the pesto egg. Slice in half & enjoy!
