Keto Mushroom Burger

I love going to the Farmers Market and we have a number of them here in Houston! I like to get up early(ish!) on Saturday morning and head over to the big Urban Harvest Market and go crazy! So many vendors! Seafood, Heritage Breed pork, Grass-fed Beef , Local Veggies and all kinds of goodies! The mushroom guy had both Lions Mane AND Trumpet mushrooms so, ya know, I just HAD to get some! I have a soft spot in my heart for farmers markets, Cuz that's where Ketonia Foods first started out! So support your local Farmers Market, you never know whose dream your helping to come true!

  1. Slice Lions Mane mushroom into 2 thick slices, approx. ½ inch thick apiece. Reserve remaining mushroom.
  2. Chop trumpet mushroom and reserved lions mane.
  3. Preheat cast iron pan over med/high heat.
  4. Add ½ tbs butter and saute diced mushrooms till lightly browned. Add salt and pepper to taste. Set aside and wipe out pan with paper towel.
  5. Using the same pan, add butter and lions mane shrooms. Cook till golden brown on both sides about 3 minutes per side.
  6. Lower heat to medium and top each mushroom with 2 slices of Swiss each.
  7. Slice buns in half and place a mushroom burger on each. Top with sautéed mushrooms and top with bun. Enjoy!
