Keto Tostadas
I made these up as I went along one nite when I was craving Mexican flavors. It's super simple and you can use up any bits of leftover salsa or chilies you may have! I had Pace Picante Sauce and Herdez Salsa Verde, but you could used low carb enchilada sauce or chipotles in adobo! You could even saute a bit of rotisserie chicken instead of the beef! Whatever floats your boat!

- In a medium skillet start to brown beef. When it starts to brown and release liquid, tossing the onion and garlic, and taco seasoning. If the meat has rendered a lot of fat,drain. Stir in sauces once meat is browned and cook for a minute or two. Set aside.
- Preheat oven to 375*
- Slice halfway into each tortilla. Shape into a cone and place in cupcake tin.
- Spoon 1 tbs of cheese into bottom of tortilla cup. Spoon in beef mixture and top with another tablespoon of cheese.
- Place in oven for 8-10 minutes, till tortillas are crisp and cheese is melted.
- Top tostadas with diced avocado, sour cream, olives and extra sauce if desired.
