Keto Chocolate Dipped Raspberries

My husband loves Tru Fru. They're made by Mars, Inc. And they ARE delicious! They also have 10 carbs for FOUR of them. I don't know about you, but at our house, four raspberries do not a dessert make! LOL. SO I tweaked it. Here's my Keto version!

Method
 

  1. Spread raspberries evenly on a parchment lined sheet pan. Freeze several hours or overnight.
  2. Gently melt Lily’s chocolate with 1 tbs coconut oil in a double boiler. Do not let water boil. Lily’s chocolate is not as stable as regular chocolate and it will seize over too much heat.
  3. Remove frozen raspberries and using a fork, dip each raspberry in chocolate covering each berry completely. Let excess drip back into chocolate and place back on parchment lined sheet tray.
  4. Freeze immediately. enjoy!
