Keto Bacon Spinach Artichoke Dip Bites

I love Spinach artichoke dip! It's easy, delicious and full of cheesy goodness! So what could make it better? Duh! Bacon makes everything better! Then bake it onto a zucchini disc til its all crispy and amazing! Seriously, this is guilt free awesome!

Method
 

  1. Preheat oven to 400*Slice zucchini into rounds approximately 1/2 an inch thick and place on parchment lined sheet pan.
  2. Combine the rest of the ingredients, from the cream cheese through the garlic in a large bowl. Stir with a spatula till combined.
  3. Spoon 1 spoonful of cheese mixture on top of each zucchini slice.
  4. Bake in oven till golden brown and zucchini is starting to soften but still has a bit of bite to it. 25-35 minutes (depending on how you slice the zucchini)Serve warm
