Keto Greek Shrimp Salad

Ingredients
  

  • 2 bags chopped salad mix
  • 1 cucumber (diced)
  • 1 c feta
  • ½ kalamata olives (sliced)
  • 1 red bell pepper (diced)
  • ½ c marinated artichoke hearts
  • ½ c cherry tomatoes (sliced)
  • 1 lb shrimp
  • 1 tbsp old bay seasoning
  • 1 lemon (sliced)
  • 3 tbsp olive oil
  • 1 clove garlic (minced)
  • 1 tsp fresh dill (minced)
  • 1 tsp rosemary (minced)

Method
 

First Recipe
  1. In a large salad bowl, combine two bags of choppedsalad mix.Chop up all your veggies: cucumber, kalamata olives, red bell pepper, marinated artichoke hearts, cherry tomatoes. Place them on top of the salad mix, and top it with thefeta cheese.
Second Recipe
  1. In a largepot, add enough water to completely submerge theshrimp. Bring to boil and add 1 tbsp ofold bay seasoningto water. Add in your shrimp and cook until the water starts to boil again, 3-5 minutes. While the shrimp is boiling, combineolive oil,garlic,dill, androsemaryin a medium bowl. Slice thelemonand add slices into the bowl. Squeeze the juice from the ends of the lemon into the mediumbowl, discard the lemon ends. Once shrimp is cooked, drain and transfer them into the bowl of seasoning. Toss the shrimp in the lemon marinade. Add shrimp to the salad and toss everything together.
