Easy Keto Bread Pudding
- Cut bread into 1-inch cubes, put in an ovenproof dish.
- Sprinkle chocolate chips, walnuts, and berries over bread and mix a bit.
- In a bowl whisk together Swerve, eggs, cream, cinnamon, vanilla, and salt until combined well and then pour the mixture evenly over bread.
- Let sit for half an hour to let the bread absorb the custard mixture. Dot with butter.
- Preheat oven to 350° F
- Bake the bread mixture, uncovered, in the middle of the oven until puffed and edges are pale golden, 35 to 40 minutes.
- Serve immediately or at room temp with whipped cream if desired.
