Keto Caprese Salad

Nothing beats the summer heat like a fresh, cold salad. One of the best parts about this Keto Caprese Salad is that it can be enjoyed right away, or packed in your lunch for a perfect afternoon snack. This recipe is a big favorite of mine because of the freshness and flavors, but also because it’s so light and refreshing. The tomatoes and mozzarella cheeses are delicious when paired together and the basil really adds a zing to this salad!

Ingredients
  

  • 1 large tomato
  • 8 oz ball fresh mozzarella
  • 8 leaves fresh basil
  • salt & pepper ( to taste)
  • Olive oil (California olive ranch)

Method
 

  1. Using aknife, core out the stem of the tomato and cut 4 large slices. Cut 4 equally thick slices of mozzarella. Pick 8 leaves of basil. Place the tomatoes, mozzarella, and basil on a plate in order. Sprinkle salt and pepper down the middle and drizzle with olive oil.
