Keto Pesto

This green and bright Keto Pesto is sure to make everything taste better. Having this at home is very handy whenever you are craving pesto pasta, or if you just want to have another condiment to your hearty chicken or seafood meal.

Ingredients
  

  • 2 cups basil (fresh )
  • ½ cup pine nuts (toasted )
  • 4 cloves garlic
  • 1 cup parmesan cheese (freshly shredded )
  • ½ Cup olive oil
  • 1 Tbsp olive oil (to float on top of mixture)
  • 1-2 tbsp Splash of pinot grigio (to taste)
  • Salt to taste

Method
 

  1. Put all ingredients up to the olive oil in thebowlof afood processorand pulse till its a thick paste.
  2. With machine running , slowly pour in the oil, stopping the machine as necessary to scrape down the bowl. Stir in wine.
  3. Store in amason jaror other container. Float a tbsp or so oil on top to keep from oxidizing. Keep refrigerated.
