Ingredients
  

  • 157 g vital wheat gluten with the next 6 lines, replaces 321.5 g Ketonia bread mix equivalent, sifted (discontinued), 1.75 cups: 157g vital wheat gluten, 84g flax meal, 38g oat fiber, 35g almond flour, 6g salt, 1g xanthan gum, 0.5g citric acid – sift, grind what doesn’t pass through, then sift again
  • 84 g golden flax meal
  • 38 g oat fiber
  • 35 g almond flour
  • 6 g salt
  • 1 g xanthan gum
  • 0.5 g citric acid
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 2 large egg yolks
  • 420 ml heavy cream 1.75 cups
  • 120 ml oil 1/2 cup
  • 2 large egg whites whipped to stiff peaks
  • butter and Lakanto maple syrup for serving

Method
 

  1. Sift Ketonia mix through a fine-mesh strainer. What doesn’t pass through, grind in a coffee grinder or small blender, then sift again. Combine sifted mix with baking powder and salt.
  2. In a bowl, whisk egg yolks and oil together. Add to dry ingredients alternately with heavy cream, mixing until combined.
  3. In a separate clean bowl, beat egg whites until stiff peaks form. Gently fold into the batter – do not overmix.
  4. Pour batter into a heated, non-stick waffle iron just to fill the bottom tray. Cook per manufacturer’s directions or until golden brown and steam has subsided. Serve with butter and Lakanto maple syrup.

Notes
