I've been playing with a Ketonia sourdough starter for over a year now. I even brought one on vacation with me!! But I have not perfected it yet! This is a bit of a 'cheat" to keep us all satisfied until I get a true sour perfected. You will be using the Keto Ketonia Sourdough Starter recipe which, after 5 days of feedings will give you enough starter to make this recipe.

Instructions
Combine all ingredients in bowl of Kitchen Aid. Using paddle, mix on medium for 4 minutes.
Turn out on work surface that has been lightly sprayed with cooking spray. Knead a bit and form into a ball.
Place on parchment covered sheet pan and cover with plastic wrap. Let rise till doubled, roughly 1.5 hours.
Again, turn out dough onto sprayed work surface and shape into a ball. You can now put it back on the parchment lined sheet to rise. I used a banneton proofing basket because I happen to have gotten on for Christmas, but it's not necessary, just pretty!!
Preheat oven to 400* If you have a pizza stone, not is a good time to use it! Let it preheat as well. If you don't have one, no problem, The bread will be fine on a sheet pan!
Let dough rise another 1.5 hours.
Before putting bread in oven, slash the top of the bread with a sharp knife.
Bake for 30 minutes. I usually throw a couple of ice cubes in the bottom of the oven for steam, but its not absolutely necessary.
Let bread cool on a rack before slicing. You will be rewarded for your patience! If you cut it too too, the crumb will be too moist!
