St. Patricks Keto Shepherd's Pie

As you can see from the ingredients picture, I used pre-ground lamb. I will definitely grind my own next time as I found the pre-ground kind of gamey tasting! You could certainly use a cauliflower mash instead of the Kabocha, but the squash has a very subtle sweetness that I really enjoyed!

Ingredients
  

  • 1 lb ground lamb
  • 1 medium onion (diced)
  • 1 large rib of celery (diced)
  • 1 small carrot (diced)
  • 8 oz sliced mushrooms
  • 1 tbs olive oil
  • 2 tbs Ketonia Bread Mix
  • 1 tsp Better than Bouillon
  • 1 cup hot water
  • 1 tsp worcestershire sauce
  • 1/4 cup dry red wine
  • Salt and Pepper to taste
  • 1 bag frozen Kabocha squash
  • 2 tbs sour cream
  • 2 tbs butter
  • 1 cup shredded cheddar cheese
  • Salt and Pepper to taste

Method
 

  1. Prepare ingredients.
  2. Preheat oven to 375*F
  3. In a largepan, brown lamb till no pink remains. Remove lamb from pan and reserve on aplate. Using fat from lamb, saute vegetables (small carrotsandcelery) till soft. Return lamb to pan. Add oil andKetonia bread mix(this will thicken the gravy). Cook for 2 minutes, stirring constantly. Add hot water andBetter than Bouillonand stir till it thickens. Add red wine andWorcestershireand simmer for 5 minutes. Pour into adeep-dish pie plate.
  4. MicrowaveKabocha squashfor 6 minutes. Mash with apotato masher. Stir insour cream,butterand ¾ cupcheddar cheese. Spoon squash on top of the meat mixture and smooth it over, covering the meat. Sprinkle ¼ cup remaining cheese on top.
  5. Bake 45 minutes in 375* oven till golden brown. Enjoy!!!
