Method
 

  1. Heat oil to 350°F in a large frying pan - about 1 inch of oil. Use a thermometer to maintain temperature throughout frying.
  2. Combine bread mix dry ingredients and almond flour, salt, and baking powder. Whisk to combine.
  3. Add apple cider vinegar to heavy cream and let sit 5 minutes. Add eggs, corn extract, and honey to cream and whisk thoroughly. Combine wet and dry ingredients - it will be a wet, lumpy dough.
  4. Keep a bowl of cool water nearby. To make each corn dog: wet your hands, scoop a small handful of dough into your palm, mold it around a hot dog, insert a stick if using, and gently lower into 350°F oil.
  5. Fry until golden brown all over. Maintain oil temperature throughout - too cool means soggy, too hot means burned outside/raw inside. Serve with sugar-free ketchup and mustard.

Notes
