Cook Time 20 minutes
Servings: 12 kolaches

Ingredients

  • 157 g vital wheat gluten
  • 84 g flax meal
  • 38 g oat fiber
  • 35 g almond flour
  • 6 g salt
  • 1 g xanthan gum
  • 0.5 g citric acid
  • 2 eggs
  • 2 tbsp butter, room temperature
  • 100 g erythritol 1/2 cup, Swerve or equivalent
  • 1 tsp honey
  • 1 tbsp instant yeast
  • 120 ml Good Good low carb jelly 1/2 cup, apricot and raspberry recommended
  • 1 egg whisked with 1 tbsp water egg wash

Equipment

  • 1 Sheet pan
  • 1 Parchment paper

Method

  1. Combine all ingredients except jelly and egg wash and knead dough per directions. Cover and rest for 60 minutes.
  2. Preheat oven to 375°F. Roll dough into a roughly 12x12 inch rectangle. Divide into 12 or 24 equal portions (mini kolaches are great). Let rise for 1 hour on a parchment-lined sheet pan.
  3. Using your thumb or a tart tamper, make a deep indent in the center of each. Brush with egg wash. Place 1 tsp jelly in each divot.
  4. Bake 15 to 20 minutes until golden brown and delicious.

Notes

Good Good jams use erythritol and stevia and have genuinely fruity flavor - goodgood.net or Amazon. In cooler kitchens give the dough more time to rise. Nutrition is estimated per kolache.
