Method
- Cut up vegetables into bite size pieces. Add 1 tbs oil and ¼ cup water. Place top on pan and steam for 4-5 minutes, checking often to add more water if necessary.
- Remove lid and add garlic and a bit more oil if necessary. Sauté veggies till lightly browned. Don't let garlic burn.
- Add lemon juice and feta and cook for another minute or so till feta gets a bit melty.
- drizzle with remaining oil and chow down!
