Keto Spring Vegetable Medley

Your favorite veggies steamed then sautéed, tossed with olive oil and lemon juice and bright feta cheese! Beautiful spring vegetables couldn't taste any better!

Ingredients
  

  • 18 asparagus spears (cut in 2 inch pieces)
  • 1 large zucchini (Thinly sliced)
  • 1 bunch broccolini (chopped in 2 inch pieces)
  • 5 oz snap peas
  • 3 cloves garlic (minced)
  • 3 tbs olive oil (divided)
  • ¼ cup water
  • 6 oz feta (crumbled)
  • 1 small lemon (juiced)

Method
 

  1. Cut up vegetables into bite size pieces. Add 1 tbs oil and ¼ cup water. Place top on pan and steam for 4-5 minutes, checking often to add more water if necessary.
  2. Remove lid and add garlic and a bit more oil if necessary. Sauté veggies till lightly browned. Don't let garlic burn.
  3. Add lemon juice and feta and cook for another minute or so till feta gets a bit melty.
  4. drizzle with remaining oil and chow down!
