Method
- In bottom of large coffee mug, add 1 tbs pumpkin, 1/4 tsp spice and 1 tbs erythritol. Turn on coffee maker to fill mug with coffee. Add 1 tbs cream. Stir.
- In a tall jar or glass, large enough to fit immersion blender tip, combines 1 tbs pumpkin, 1 tbs erythritol and 4 tbs (1/4 cup) of heavy cream. Insert immersion blender and pulse till whipped.
- Top coffee with whipped cream and sprinkle more pie spice.
