Method
- Prepare Ketonia Bread mix according to directions. Sprinkle with coarse salt if desired and fresh rosemary.
- After the first rise using an oiled sheet pan or 13 x9 cake pan, press dough out into a rectangle. Drizzle with oil and dimple surface with fingers.
- Cover and let rise for 30 minutes. Dimple once more before baking.
- Bake for 30 minutes. Let cool. Cut bread in half and save for another use. Slice bread horizontally.
- Layer Meats, cheese, basil, peppers, artichokes, and arugula over sliced bread. Drizzle with olive oil and balsamic vinegar.
- Add salt and pepper if desired. Top with another piece of focaccia bread.
- Tightly wrap the sandwich in plastic wrap and place on a sheet tray.
- Now take a cutting board or sheet tray and place it on top of the sandwich. Place a couple of heavy cans on top to press the sandwich and refrigerate overnight.
