  1. Prepare Ketonia Bread mix according to directions. Sprinkle with coarse salt if desired and fresh rosemary.
  2. After the first rise using an oiled sheet pan or 13 x9 cake pan, press dough out into a rectangle. Drizzle with oil and dimple surface with fingers.
  3. Cover and let rise for 30 minutes. Dimple once more before baking.
  4. Bake for 30 minutes. Let cool. Cut bread in half and save for another use.  Slice bread horizontally.
  5. Layer Meats, cheese, basil, peppers, artichokes, and arugula over sliced bread. Drizzle with olive oil and balsamic vinegar.
  6. Add salt and pepper if desired. Top with another piece of focaccia bread.
  7. Tightly wrap the sandwich in plastic wrap and place on a sheet tray.
  8. Now take a cutting board or sheet tray and place it on top of the sandwich.  Place a couple of heavy cans on top to press the sandwich and refrigerate overnight.
