Keto Over-Easy Breakfast Taquito

Ahhh, the famous hand held breakfast! It comes in many forms. Beloved here in Texas is What-A-Burgers breakfast taquito. One of the world's quintessential hangover foods! (Don't ask me how I know this!) But sometimes you just need a runny yolk. Here is my 1 pan solution!

Ingredients
  

  • 2 large eggs
  • 4 slices bacon (crumbled)
  • 2 tbs jack cheese
  • 1 low carb tortilla

Method
 

  1. Spray small non stick skillet with cooking spray. Over medium heat, crack 2 eggs into pan. Place low carb tortilla on top. Press lightly. Cook 1-2 minutes depending on how runny you like your eggs.
  2. Flip out of pan onto plate with eggs facing up. Crumble bacon and cheese over eggs. Roll into a taquito shape.
  3. Dip in salsa if desired. Don't forget to add those carbs!
