Keto Meatloaf with Mushroom Gravy

Meatloaf has to be one of my all time favorite comfort foods. And now that we made it keto-fied, it is so much better! This Keto Meatloaf with Mushroom Gravy certainly hits the spot. Super easy to make and the mushroom gravy is such an incredibly tasty accompaniment.

Ingredients
  

  • 3 lbs ground beef
  • 2 lg eggs
  • 1 small onion (divided and diced)
  • 1 rib celery (diced)
  • ½ cup V8 Juice
  • ¼ cup Pork Panko
  • 1 tsp Garlic salt
  • 1 tsp pepper
  • 1 lb mushrooms (white, sliced)
  • 1 cup heavy cream
  • 1 tsp Gravy Master

Method
 

  1. Preheat oven to 375.
  2. Combine all ingredients in a large bowl. Mix well. I use my hands!
  3. Press firmly into loaf pan.
  4. Bake 1 hour.
  5. Let meat rest while you make the gravy.
  6. Pour juices from meatloaf in fat separator. Reserve 2 tbs fat from top.
  7. Saute sliced mushrooms in reserved 2 tbs fat from meatloaf.
  8. Pour reserved juices into pan with mushrooms. Stir in cream and Gravy master. Bring to a boil. Lower heat a simmer till slightly thickened. Serve over meatloaf.
