Preheat oven to *425
Saute chorizo and pepperoni in a small sauce pan. Drain fat.
Slice Jalapeños in half and remove seeds and ribs. I wear glove.
In a small bowl combine softened cream cheese and meat crumbles. Fold together until smooth and completely mixed together. * I picked up the Volpi chorizo and pepperoni crumbles at HEB. But I sometimes use sautéed pancetta or prosciutto or plan pepperoni minced small.
Pipe cheese mixture into jalapeño halves.
Wrap each jalapeño in a strip of bacon.
Place on sheet pan lined with foil. (Makes clean up a breeze!)
Bake for 25 minutes or till bacon ai cooked and crisp.
Try not to eat all 12 by yourself!!
